Pure strain of cheese culture selected from traditional French cheeses. P.R. SWING cultures are an essential ingredient for making blue mold cheeses. During germination, the culture will develop a blue mycelium throughout the cheese which will contribute to the typical flavour (through the process of lipolysis) and texture (through proteolysis) of the cheese.
This culture can be used to make Danablu, Roquefort, Stilton and other blue cheeses.
