Healthy Mushrooms

 Contrary to popular belief, edible mushrooms are often more nutritious than their vegetable counterparts, containing more essential amino-acids, proteins, minerals, vitamins and fiber. As well, there are many mushrooms that have been traditionally used to treat a wide range of illnesses, from upset stomachs to high blood pressure. Scientific research has now traced the multiple beneficial effects to bioactive components, notably various polysaccharides (primarily β-glucans).

Quite a few of these healthy mushrooms are indigenous to North Eastern North America, among them Reishi (See picture: Ganoderma Tsugae) and Maitake.  Both contain known anti-inflammatory (sterols) and antimicrobial molecules. Reishi, Chaga and Turkey tail provide antitumoral and antioxydant compounds. Gastronomical species like Oyster mushrooms, Lion’s Mane and Matsutake also contain antioxidant, antitumoral and immuno-modulating components, respectively.
