Llao llao Jam

    • 3 cups of llao llao
    • 1 medium onion 
    • 1 green apple
    • ¾ cup of blond sugar 
    • ¾ cup of apple cider vinegar 
    • 1 drizzle of oil 
    • Spices: ginger, cloves, cinnamon and pepper



Finely chop the onion. Peel and cut the apple into small squares. Finely grate the ginger. In a saucepan, put the onion with a little oil and brown for a few minutes. Add the apple, grated ginger and sauté for another minute. Meanwhile, cut the llao llao into medium pieces with your hands, add to the pot with the vinegar, sugar and spices.
Leave the pot covered over low heat, stirring and tasting occasionally for 40 to 50 minutes.
To keep as is, place hot in clean jars with undamaged lids. Place the covered jars of hot water in a saucepan and bring to a boil. Let stand for about 10 minutes. Let cool in the pot and store in a cool, dark place.
Consume with meats, fish, grilled cheeses and more.
