Bagel with Cream Cheese and Pink Oyster Mushroom

    One sesame Bagel, cut in half

    2 Tbsp cream cheese

    2 thin slices red onion

    2 Tbsp capers or caper berries

    100g pink Oyster mushrooms

    1 tsp lemon juice


In a dry skillet over medium-high heat, grill the mushrooms on either side until the water is released and they are slightly browned. Add the lemon juice to set the colour. Let cook for another 2 minutes. 

Set aside.

Toast the bagel.

Spread the cream cheese on the bagel and garnish with the onion, grilled mushrooms and capers.
