Breaded Chicken of the Woods

    600g Chicken of the Woods (tender)

    4 eggs





    Salt & pepper



Slice the Chicken of the Woods and chop thickest parts thinly. Blanch 5 min. in boiling water, adding salt and spices of your choice to enhance flavor.

Strain in a cloth. Break the eggs in a deep bowl, add salt and pepper, beat. Soak the mushrooms in the bowl, roll them in the breadcrumbs and put in a plate.

Brown the breaded mushrooms on both sides in a hot pan. Dress immediatly in a serving platter or directly in the plates.

The taste and texture will remind you of breaded poultry escalope, orange colored on one side (cap) and yellow on the other.
